M&M Cookie Bars with Oatmeal and Chocolate Chips – You Can’t Eat Just One
These M&M cookie bars with oatmeal and chocolate chips are a family favorite around here! They’re great for the holidays, school treats, bake sales, parties, and other events where a dessert is needed.

You can really use them for anything you want because they’re popular and you can make a large enough batch to feed a crowd.
What You Need:
- 1 1/2 C All-purpose Flour
- 1 C Old-fashioned Oats
- 3/4 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1/2 C Butter, Softened
- 1/3 C Creamy Peanut Butter
- 1/2 C Granulated Sugar
- 1/2 C Light Brown Sugar
- 1 Teaspoon Vanilla Extract
- 1 Large Egg
- 1 Large Egg Yolk
- 1/2 C Chocolate Bars (chopped into small pieces)
- 1/2 C Chocolate Chips
- 1 C M&M’s
Preheat oven to 350 degrees.
Line a 9×13-inch baking pan with parchment paper. I always like to leave a little bit of an overhang so that I can lift the bars out easily.
In a small bowl, whisk together the flour, baking soda, salt, and the oats. Once those are all mixed together, set it aside.
In a mixing bowl with a paddle attachment, cream together the butter, peanut butter, brown sugar, and granulated sugar until it’s fluffy and light in color. About 2 minutes.
If you don’t have a paddle attachment for your mixer, it’s ok, just use the regular mixing attachments. The paddle just helps mix it without putting a lot of air into it and keeps it fluffy.
Once the mixture is creamed, add in the vanilla, egg and egg yolk.
Add in the dry ingredients we set aside early and then mix until everything is combined.
Add the chocolate chip bars, chocolate chips and m&m’s, blend until mixed in.
If you’re cooking for the holidays, it’s always fun to use festive colors like red and green, but you don’t have to!
Once you’ve added all the chocolate pieces into the mix, press the batter into the baking dish we lined with parchment paper.
Bake for 14-16 minutes or until the edges are light brown in color.
The bars may look a little pale and slightly underdone in the middle. That’s ok! They’ll finish cooking up a bit as they sit and cool.
Let bars cool in baking pan for 20-30 minutes.
These M&M cookie bars with oatmeal and chocolate chips are a lot like the Monster Cookies everyone loves just cut into bars so that they’re nice and soft throughout.
You can easily call them Monster Bars to go along with any Halloween games or Halloween parties!
