Instant Pot Italian Beef Sandwiches with Pepperoncinis Quick Easy Pressure Cooking

This Instant Pot Italian Beef is AMAZING! It’s tender, juicy, and full of flavor. The best part is, it only takes about an hour to cook!

It’s a favorite in our house so there is never much, if any, left afterward. I should clarify that Italian beef is a favorite of mine, salmon for my daughter, and anything with BBQ sauce for my son.

Since it’s cooked in the pressure cooker, it’s easy to make and it’s a lot quicker than the slow cooker but just as tasty! However, if you’d rather cook it in the crockpot, I’ve included the instructions for that as well!

Cooking with the Instant Pot

Italian beef has always been a favorite of mine and there are a few different ways we cook it. I’ve just always slow cooked it in the crockpot though, never the Instant Pot.

It took me a bit to get the hang of cooking a roast in the Instant Pot. The first couple of tries I had no idea what I was doing so they didn’t turn out all that good. They were always tough or they tasted too bland.

I kept going and trying different recipes until I finally got it just right. The first successful recipe we made in the Instant Pot were these amazing roasted potatoes. If you are looking for a side dish, these are a must-try!

Now that we are using the Instant Pot more, we are finally getting the hang of it and aren’t so intimidated by it.

Let’s just say it really scared me when I first got it because I had NO IDEA what I was doing!

This Instant Pot Italian Beef is cooked with pepperoncini’s and a few other seasonings to give it a little kick. The meat soaks in all of the flavored goodness which is what makes it so delicious!

What’s Needed: These were made in the Instant Pot. I use the Instant Pot Duo.

Ingredients:

  • 3-5 lb roast (I recommend chuck roast.. If you find that the roast to too big for your Instant Pot, just cut the meat in half or thirds)
  • 2 Tablespoons olive oil
  • A 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sugar
  • 1 1/2 tsp of Italian seasoning
  • A pinch celery salt
  • Salt and pepper, to taste
  • 2 cups of beef broth
  • 1 cup Pepperoncini peppers, with about 1/2 cup of juice from the jar.

Directions:

Mix together the garlic salt, onion powder, sugar, Italian seasoning, celery salt, salt, and pepper. Set aside. Place the olive oil in your Instant Pot and set it to the saute setting.

Pat the roast dry with paper towels and season it with the mix of dry seasoning we set aside.

Place the roast in the hot oil and sear on all sides for about 2 minutes on each side. Once the roast is fully browned and seared on each side, turn off the Instant Pot completely.

Immediately add the beef broth, peppers, and the 1/2 cup of the juice from the jar.

Secure the lid on the Instant Pot and make sure the valve is set to sealing!

Select the Meat/Stew selection. Set the timer to cook for 60 minutes. You can also leave it to just “pressure cook” and set the timer to 60 minutes.

When the timer is done, let the Instant Pot release naturally.

Now all you need to do is shred the meat. I like to use two forks to shred the meat. After it’s shredded, I put it back into the Instant Pot so that it soaks up more of the juices.

To make the sandwiches, just put as much meat (and peppers if you want) on your favorite hoagie rolls.

I love dipping my Italian beef sandwich into the juice, so I always grab a cup of juice out of the Instant Pot to go on the side.

A few other fun ways to enjoy your Italian Beef:

  • You can add cheese to your sandwiches. Our favorite cheese to use is Provolone.
  • Save some of the Au Jus from the Instant Pot to dip your sandwiches in.
  • Toast the buns on the skillet with a tiny bit of butter for some extra flavor.

What kind of meats work best for Italian Beef?

I always use Chuck Roast for Italian Beef and Pot Roast. I find that it cooks better all around and gives a better flavor to the dish.

How can I make the Au Jus sauce thicker?

Once the Italian Beef done cooking, take out the meat and change your Instant Pot setting over to Saute. Let it simmer until the sauce has thickened up to your liking.

To make in Italian Beef In the slow cooker/crock pot:

Sear the meat and place in the crock pot. Add all of the ingredients. Cover and cook on low for about 6-8 hours, then shred with a fork. I always let it simmer a little more in the crock pot after shredding it for a bit more flavor.
