Baked Shrimp Jambalaya with Sausage
This baked shrimp jambalaya with sausage makes for a delicious dinner when you are craving a warm and filling meal.
It’s also easy to make so it is perfect for weeknight dinners or when you don’t feel like putting too much effort into dinner.
Filled with shrimp, rice, sausage, and spicy flavors, this baked shrimp jambalaya is sure to be a hit with everyone.
Baked Shrimp Jambalaya with Sausage Recipe
Serves: 6 Bake: 45 Minutes to 1 Hour (until rice is soft)
- 2 cups salad shrimp; precooked and shells removed
- 1 package Zatarain’s andouille sausage; cubed
- 2 1/2 cups rice
- 2 1/2 cups water
- Can diced tomatoes
- 1 can tomato paste
- 1 white onion; diced
- 4 stalks of celery; diced
- 1 bell pepper; diced
- 2 1/2 teaspoons cajun seasoning
Preheat oven to 375 degrees F.
In a large bowl, mix together the onion, celery, and bell pepper.
Add the rice, diced tomatoes, and tomato paste. Stir well.
Add in the cajun seasoning and water and mix well. It will thicken as it cooks.
Once it thickens a little, add in the shrimp and sausage and stir.
Spoon in the mixture and spread out evenly in a large baking dish. Cover with foil.
Bake for 45 minutes. Test to see if rice is soft, if not, you can bake it for another 10 minutes and check again. Once the rice is done the jambalaya is ready to serve.
Note: More seasoning can be added after the jambalaya is finished. If you like a little more heat, just add a bit more cajun seasoning.
