Keto Taco Casserole – A Delicious Keto Skillet Recipe and Keto Mexican Dish
This keto taco casserole is taking taco Tuesday to a whole new level of deliciousness! It’s a delicious keto Mexican recipe that makes the perfect one pan meal for busy weeknights.
We also like to call this a keto Mexican casserole because it’s full of Mexican flavor. It also has a homemade keto taco seasoning that you can make and use for other keto Mexican recipes.
Keto Mexican Casserole Recipe
One of our favorite keto Mexican recipes with ground beef, this one-pan keto taco skillet is easy and delicious. It only takes around 25 minutes so you can have delicious Mexican casserole dinner on the table in less than 30 minutes!
It’s perfect for Mexican dinner night or if you are serving a crowd. It will also make a delicious Cinco de Mayo dish to go along with a tasty cocktail.
Cook Time: 20 minutes – Total Time: 25 minutes – Serves 6
Ingredients:
- 1 lb. ground beef (we like to use the 93/7)
- â…“ cup onion, diced
- 3 tbsp keto taco seasoning (recipe below)
- 1 cup Roma tomatoes, diced
- ½ cup chicken broth
- 1 (7.05oz) package riced broccoli and cauliflower, or you can use 1 ½ cups riced fresh cauliflower and broccoli
- 1 ½ cups Mexican blend shredded cheese
- Sour cream
- Avocado, diced
- Green onions, chopped
Homemade Keto Taco Seasoning:
(Makes 3 tbsp)
- 1 tbsp chili powder
- ½ tbsp cumin
- ½ tbsp salt
- ¼ tbsp black pepper
- ¼ tbsp smoked paprika
- ½ tsp oregano
- ½ tsp garlic powder
- ¼ tsp onion powder
- â…› tsp cayenne pepper
Directions
In a large skillet pan over medium-high heat, brown the ground beef until it is almost cooked through.
Add the onion, and continue to cook until the beef is browned and the onions are soft.
Now, add the taco seasoning to the ground beef and mix well.
After the taco seasoning, add the tomatoes and riced broccoli/cauliflower mixture. Stir to combine.
Pour in the chicken broth and mix well.
Reduce the heat to medium-low, and cook until the broccoli/cauliflower rice begins to soften. (about 3 minutes)
Sprinkle the shredded cheese over the skillet, and cover.
Let it cook until the cheese is melted, approximately 3 or 4 minutes.
Remove from heat and top with avocado, sour cream, and green onions. You can top the keto taco casserole with your other favorite toppings.
