If you are like me, once fall hits, I’m all about pumpkin. I love anything pumpkin, especially pumpkin desserts.
One of the first things we make are homemade cookies. We have an arsenal of cookie recipes we get out and use throughout the holidays, but soft pumpkin cookies are our favorite.
Don’t these look gorgeous! They are just as good as they are pretty. These homemade bakery style pumpkin cookies are topped with a tasty maple frosting.
They are D-E-L-I-C-I-O-U-S and the homemade maple frosting adds a nice touch to them!
Soft Bakery Style Pumpkin Cookies Recipe
- ¼ cup + 2 tablespoons of olive oil
- ¼ cup brown sugar
- ½ cup granulated sugar
- 1 egg
- ½ cup pumpkin puree
- 1 ½ tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1/2 teaspoon of baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cups all-purpose flour
How to make the pumpkin cookies:
- Preheat the oven to 350 degrees.
- In a bowl mix the olive oil, brown sugar, granulated sugar, egg, pumpkin puree, pumpkin pie spice, vanilla extract, baking powder, baking soda, and salt.
- Mix until well combined.
- Add in the flour and mix well.
- With a medium-sized cookie scoop (about 1 ½ – 2 Tbsp), scoop the dough and place evenly on your cookie sheet.
- Place them in the oven and bake for 12-13 minutes, or until the cookies are set.
- Allow cooling completely before adding the maple frosting.
Maple Frosting Icing Recipe
The maple frosting is what brings these bakery style pumpkin cookies together! It just adds so much flavor and compliments the cookies so well.
- ½ cup butter (softened)
- ¼ cup pure maple syrup
- ½ tsp vanilla
- 1 ½ – 2 cups powdered sugar
- 2-3 tsp milk
How to make the maple frosting:
- With a hand mixer beat butter until light and fluffy, about 1-2 minutes. Add in the maple syrup and vanilla extract. Beat until everything is mixed well.
- Mix in the powdered sugar, ½ cup at a time, mixing until everything is combined.
- Add in 2-3 tsp of milk and beat until well mixed.
- If the maple frosting feels too runny, you can add in some powdered sugar. If it gets too thick add a little more milk.
- Spread the maple frosting on the pumpkin cookies and enjoy!
For fun and for some extra flavor, I will sprinkle a bit of nutmeg or pumpkin spice on top of the maple frosting.
Trust me, these will not last long! They are a fall favorite so the cookies will be gobbled up in no time!
These would make a great addition to the holiday dessert table either for Halloween, Thanksgiving, fall events, or even Christmas.

- 1/2 tsp baking powder

- 1/2 tsp salt
