Oreo Mini Cheesecake Bites with Cherries and a Chocolate Ganache
These delicious homemade Oreo mini cheesecake bites make for the perfect dessert for any occasion or celebration.
These mini Oreo cheesecakes are combined with Maraschino Cherries and chocolate chips, then topped with a homemade whipped topping and ganache.
Perfect for entertaining, these cheesecake bites sit on a crushed Oreo cookie crust that is topped with a homemade cream cheese filling.
Inside the filling, you will find cherries and mini chocolate chips. The mini cheesecakes are drizzled with a homemade ganache and topped with a homemade whipped topping, chocolate chips, and a Maraschino cherry.
Sweet, creamy, and picture perfect, these mini bites will be a hit at any party or a delicious sweet treat after a meal.
Oreo Mini Cheesecake Bites with Cherries and a Chocolate Ganache
These mini Oreo cheesecakes may seem like they take a little extra time, but they are soo worth it!
There are ways to shorten up the time a bit though if you need them on short notice or are looking for a no bake dessert.
- You can easily use a premade cheesecake filling instead of making your own.
- Use cool whip instead of the homemade whipped topping. It will change the taste a bit but it is still delicious.
Oreo crust:
- 16 chocolate oreo cookies, creme removed
- 3 tbsp sugar
- ¼ C unsalted sweet cream butter, melted
Line a cupcake pan with cupcake liners. Crush the cookies into fine crumbles and pour into a bowl, then add the butter and sugar and mix.
Scoop about 1 tbsp of the crust into the cupcake liners and flatten the bottoms.
Cheesecake Filling
If you are choosing to use a premade cheesecake filling, skip this step. Just add the premade filling on top of the Oreo crust.
- 2 – 8oz cream cheese, softened
- 1 C sugar
- ½ C sour cream
- ¾ tsp pure vanilla extract
- ⅛ tsp kosher salt
- 2 large eggs
- 1 C chopped Maraschino Cherries
- 1 C mini chocolate chips
Preheat oven to 325 and line cupcake pan with cupcake liners.
Using a mixer, beat together the cream cheese and sugar until
smooth and creamy. Then beat in the sour cream, vanilla and salt until combined.
Beat in the eggs, 1 at a time until combined ad fold in the mini chocolate chips and chopped maraschino cherries.
Scoop about ¼ C of the cheesecake batter into the cupcake liners and bake in the oven for 17-21 minutes or until the edges start to turn a light golden brown color and the center is set.
Allow to cool completely. I like to set them in the fridge overnight so that they continue to set.
Chocolate Ganache
- ½ C semi sweet chocolate chips
- ¼ C heavy whipping cream
- 1 disposable piping bag
Using a small saucepan, heat up the heavy whipping cream to a slow simmer.
Pour the chocolate chips into a medium bowl and pour the hot cream over the chocolate chips.
Spoon the ganache into the piping and cut the tip off so that you can drizzle over the cheesecake. You will want to allow the ganache to harden in the
fridge for 30 minutes so that it sets.
Whipped Cream
When using premade whipped cream (Cool Whip), just add the whipped cream on top of the mini cheesecakes.
- 1 ½ C heavy whipping cream
- ¼ Powdered Sugar
- ¾ C mini chocolate chips
- 12-14 maraschino cherries
- 1 large piping bag fitted with star tip
Using a large bowl and hand mixer, beat together all ingredients until
it’s stiff. You should be able to make peaks with the cream.
Pipe dollops of the whipped cream onto the top of the cheesecakes and top with mini chocolate chips and a maraschino cherry.

These made about 12 cupcake-sized treats for us but you can increase or decrease the amount of Oreo crust and filling that you use to make more or less.
