Banana Pudding Cookies
Banana Pudding Cookies. Enough said! It’s no secret that we love bananas in this house. Our favorite is banana bread and our second favorite is now these banana pudding cookies!
Don’t they look delicious! We made these and there wasn’t a crumb left because we all devoured them!
The banana creme pudding is what makes them so soft and chewy. The chocolate chips add a bit of white chocolate flavor and when you combine the two, you get these heavenly cookies.
Let’s just get right to the recipe, shall we?
Here’s a list of everything you need.
- ½ C unsalted butter softened
- 1 C sugar
- 1 – 3.4 Oz Instant Banana Creme pudding mix
- 1 large banana, mashed
- 2 large eggs
- 2 ½ C flour
- ½ tsp baking soda
- ½ tsp kosher salt
- 2 ½ C white chocolate chips
Now, let’s put it all together. The process is pretty simple and doesn’t take much time at all.
Preheat your oven to 350 degrees and then you will want to line two cookie sheets with parchment paper. The parchment paper will make for easy cleanup.
In a medium bowl, whisk together the dry ingredients; flour, baking soda, and salt. While this isn’t a must-do, it definitely helps with anything you are baking.
I always use a stand mixer to mix everything when I’m baking, but if you don’t have one you can put some hard work into stirring it. So, beat together the butter and sugar until creamy and smooth.
Beat in the mashed banana, banana pudding mix, and eggs until it’s mixed well and you want to make sure you get a smooth consistency without any lumps.
As you’re mixing, slowly add in the dry ingredients. Mix well and fold in the white chocolate chips. I don’t recommend throwing these into the mixer, you’ll want to actually fold these in so that the chocolate chips don’t get crushed.
Once we have everything mixed you can use an ice cream scoop to make balls to place onto the cookie sheets, about 2 inches apart. You can also just use a spoon to make drop cookies.
If you want you can add a few extra chocolate chips and place some chips on top of the cookies.
Bake the cookies for about 10-13 minutes or until they are lightly golden and done how you like them.
Allow the cookies to cool completely before you dig in!
