Mini Chocolate Cheesecake Dessert for Valentines Day

If you are looking for a mini chocolate cheesecake dessert for Valentine’s Day or just to show someone how much you care, these tasty mini cheesecakes are perfect.

Mini Chocolate Cheesecake Dessert

We are using a very similar Oreo crust and filling recipes as we did with the Cherry Garcia mini cheesecake bites and the mini Oreo cheesecakes.

Mini Oreo Crusts

  • 16 chocolate Oreo cookies, cream removed
  • 3 tbsp sugar
  • ¼ c butter, melted

Line a cupcake pan with cupcake liners.

Crush the cookies into fine crumbles and pour into a bowl. Add in the melted butter and sugar. Stir until combined.

Scoop about 1 tbsp of the crust into each of the cupcake liners. Using a flat bottom cup, lightly press the crust into a flat disk so we can add our filling.

Chocolate Cheesecake Filling

  • 2 – 8oz cream cheese, softened
  • 1 cup of sugar
  • ½ cup of sour cream
  • ¾ teaspoon pure vanilla extract
  • ⅛ teaspoon kosher salt
  • 2 eggs
  • 3 tablespoons of Hershey Dark cocoa powder

Preheat the oven to 325 degrees.

Using a mixer, beat together the cream cheese and sugar until
smooth and creamy. Then, add in the sour cream, vanilla, cocoa powder, and salt and mix until thoroughly combined. Beat in the eggs, 1 at a time until they are mixed well.

Scoop about ¼ C of the cheesecake batter into the cupcake liners. Bake in the oven for 17-21 minutes or until the edges start to turn a light golden brown color and the center is set.

Allow them to cool completely and place in fridge overnight to finish setting.

Chocolate Ganache

  • 1 C semi-sweet chocolate chips
  • ½ C heavy whipping cream

Using a small saucepan, heat up the heavy whipping cream to a slow simmer.

Pour the chocolate chips into a medium bowl and pour the hot cream
over the chocolate chips. Allow them to sit for a minute before whisking until smooth.

Spoon on about 1 ½ tbsp of the ganache onto the cheesecakes and smooth until even. Allow to harden in the fridge

Chocolate Whipped Cream

  • 1 cup of heavy whipping cream
  • ¼ cup of Hershey cocoa powder
  • ¼ cup of powdered sugar
  • 1 large piping bag with a star tip
  • 1 cup of Valentines Day heart confetti sprinkles

In a mixer, beat the ingredients for the whipped cream
together until stiff peaks form.

Scoop the whipped cream into the piping bag and pipe dollops of whipped cream onto the top of the cheesecake.

Sprinkle some valentines day hearts on top to give it that special Valentine’s Day look.

While you are making these mini chocolate Valentine’s Day cheesecakes, I do recommend putting them in the fridge as noted in the instructions.

Letting them sit in the fridge will help them set correctly so that you are not dealing with a squishy mess as you put them together.
