Instant Pot Parmesan Roasted Potatoes

  • Instant Pot


  • 2 lbs red potatoes petite potatoes work best
  • ½ c chicken broth
  • ½ c water
  • 1 tsp minced garlic
  • ½ tsp Italian seasoning
  • ½ tsp parsley
  • ½ tsp salt
  • 2 tbls butter
  • 1 tbls Parmesan cheese (grated)


  • Rince the potatoes and place in the Instant Pot
  • In a small bowl, combine the water, broth, and minced garlic. Pour the mixture over the top of the potatoes.
  • Sprinkle the Italian seasoning, parsley, and salt over the potatoes
  • Cook for 6 minutes with the lid on
  • Remove the potatoes and cut them in half, placing them in a mixing bowl afterward
  • Add the Parmesan and butter and toss until the potatoes are fully coated


For crispy potatoes, place potato halves in a single layer on a lined baking sheet and bake for 10 to 15 minutes in a 400 degree oven before serving.
